Steven Raichlen’s Grilled Maple Candied Bacon

Steven was gracious enough to develop a recipe for his viewers utilizing GrillGrates and boy did he go off the high board with this one. Grilling bacon without GrillGrates would inevitably result in a fire. With this recipe and GrillGrates your end result is something a little short of heaven!

  • Prep: 10 mins
  • Cook: 25 mins
  • Yields: 12 Pieces of Candied Bacon

Ingredients

1/3 cup pure maple syrup, slightly warmed

1 cup brown sugar

12 pieces thick (1/8 to 1/4 inch) sliced bacon

Directions

1Step 1: Set up your grill for indirect grilling and preheat to medium (350 degrees).

2Step 2: Spread a rimmed baking sheet with foil (this facilitates cleanup). Lightly oil a wire rack using a paper towel and place it over the baking sheet.

3Step 3: Brush each bacon slice on both sides with maple syrup.

4Step 4: Spread out the brown sugar in a baking dish. Dip each slice of syrup-coated bacon in the sugar, pressing it into the sugar. Invert to coat the other side. Arrange the bacon slices on the wire rack, leaving 1/4 inch between each.

5Step 5: Indirect grill the bacon on GrillGrates until browned and crisp and the sugar is caramelized, 15 to 25 minutes, depending on the thickness of the bacon.
