Steven Raichlen’s Grilled Maple Candied Bacon

Steven was gracious enough to develop a recipe for his viewers utilizing GrillGrates and boy did he go off the high board with this one. Grilling bacon without GrillGrates would inevitably result in a fire. With this recipe and GrillGrates your end result is something a little short of heaven!

We wanted to do an extra spicy appetizer wrapped in bacon, of course, for game day. Happily we just got some wonderful and extra zingy sauces from All Spice Café, so we knew we could put their Cayenne Habanero Sauce to good use. This is a variation of our “Chipotle Bacon Bombs” using hot sausage balls instead of ground beef. You can use mild sausage if you prefer, but Ken wanted hot. It didn’t have a lot of ingredients, but it sure had a lot of zip. These guys are OFF THE HOOK!!! Eat them off a stick, out of hand or in a sandwich, with or without more sauce. The flavors of the sausage, bacon and Cayenne Habanero Sauce jump together with the flavors of the grill!!! Patti thinks these should be served with a lot of vanilla ice cream…just sayin’.

Bacon and Blue Cheese Stuffed Vidalia Onions

This recipe was inspired by a competition BBQ friend of ours, Dean Sparks. The sweetness of the Vidalia onion is a wonderful vehicle for bold flavors like bacon and blue cheese. In this recipe we scoop out the center of the onion, sear it on a super hot grill quickly and then fill it full of goodness before it goes on the GrillGrates. These onions make a perfect accompaniment for our Grilled Beef Tenderloin

Food and Wine magazine served as the inspiration for this simple recipe. What could be better than sweet and spicy bacon? Not much! Feel free to take the flavor profile of this creation in any direction you like. Grilling the bacon adds a whole new layer of flavor that you just can’t get in the oven.

Here is a recipe that was inspired by our Grate friend Lorriane from New Jersey. She shared a picture on Facebook of this amazing stuffed pepper and we just had to have the recipe. Her latest creation combines just about everything that is good in life and is still legal.
