Our newest turkey recipe comes from none other than Meathead. He along with the folks from Chef Steps took the deconstructed method to another level by using the new Joule Sous Vide cooker. This process followed by a hot and fast smoky sear delivers the moistest most succulent turkey you will ever eat. We guarantee it!

Deconstructed Maple Brined Smoked Turkey

This recipe inspiration came during a conversation with Ms. Candy Weaver of BBQr’s Delight Smoking Pellets. One year at The Jack Daniels Invitational BBQ Competition I had the pleasure of meeting her and helping her hand out pellet samples during the festivities. We were just bouncing around ideas for turkey recipes when she dropped this gem into my lap. Perfect way to celebrate the flavors associated with colder weather and pay tribute to Ms. Candy!

Whole Roast Turkey with Sun Dried Tomato Pesto and Bacon

One of the most popular sandwich creations I came up at my previous job was the inspiration for this turkey recipe. I would combine sliced smoked turkey breast, sun dried tomato pesto, bacon, avocado and Havarti cheese and serve it on sourdough bread. This version puts the sun dried tomato pesto and bacon up under the skin of the turkey before it is roasted and then slowly bastes the bird with the flavors during the cook.

Recommended equipment: ice chest lined with a clean unused trash bag, sharp knives, roasting pan with a rack, dual probe thermometer, jelly roll pan or large roasting pan to cook the bacon, aluminum foil, A-Maze-N Tube Smoker

This mouthwatering recipe come to us from Nate with White Thunder BBQ. This is a perfect way to utilize the GrateGriddle or simply flip over your GrillGrates and cook on the back side. Be sure to check out Nate’s very well put together video instructional following the recipe. Warning! Do not watch on an empty stomach. We made the mistake and were headed to the fridge immediately.

Spatchcock Chicken on the Grill

Spatchcock Chicken has become our favorite way to grill chicken. Spatchcocking involves grilling the whole bird after cutting out the backbone and removing the breastplate. Everything grills even and juicy to its appropriate temperature. The thighs and wings are just as juicy as the breast meat. Technical note: Spatchcocking is different from butterflying. Butterflying involves splitting the bird from the breast (front) rather than from the back.
