Grass Fed Beef and Vidalia Burger Caprese

Grass fed beef is inherently lean and tastes quite different from traditional grain fed beef. Due to lack of fat in the meat you need to add something to help retain moisture and give it a little extra flavor. Shredded Vidalia onions are much like bacon- they make everything better. If you can't source a Vidalia onion any sweet yellow onion will do. We chose to serve this burger as a “salad” to keep it healthy and virtually carbohydrate free!

It’s the time of year for burgers and hot dogs! Hence the burger dog, but no wieners were harmed in this recipe. Patti wrapped her Cattleman’s Grill Steakhouse seasoned hamburger around a 2oz. log of extra sharp cheddar cheese, rolled it into a hot dog shape and served it on hot dog buns with our favorite hot dog condiments…which are a lot like our favorite hamburger condiments. These guys were packed with a hearty seared beef flavor, kissed with Pacific Pellet Rancher’s Mesquite smoke. AWESOME!

Grilled Flank Steak

Mojo Marinated Flank Steak with Cuban Black Bean Salsa

A really simple summer dish that is good anytime of the year. The acid from the lime and orange combined with garlic and jalapenos really elevates the flavor of flank steak. The room temperature black bean salsa helps keep the kitchen cool and is a perfect partner for the flavor of the mojo! Feel free to try this recipe with skirt steak, hanger steak or even a nice London broil. We grilled up some simple sweet potato planks to go along with this meal.

Grilled London Broil with Chimichurri Sauce

A simple yet delicious summertime recipe that only takes minutes to prepare. The addition of chimichurri to beautifully cooked red meat is match made in heaven. Be sure to make extra chimichurri and use it on vegetables, grilled bread and even as a light salad dressing.
