It sounds a little like a bit from a 90’s stand-up comic routine: Why do they call it a grilled cheese when everyone cooks them in a pan? The name “Grilled Cheese Sandwich” is simply a colloquialism, but we figured we would make them both ways on the grill - grilled and griddled - on a set of GrillGrates and see what happens.

Corn is a staple of cookouts, and there’s nothing like biting into a cob of juicy, flavorful corn. Our street corn recipe lends this summer favorite a little kick and a lot of flavor.

If you’re not into hot sauce, don’t worry. The mayonnaise and cheese in the recipe cool down the hot sauce, so the heat isn’t overwhelming. Experiment with different hot sauces to find what works best for you. And you’ll want to de-husk the corn and lay it straight on your GrillGrates to get that crisp, charred look.

The beauty of this recipe is in its variability: once the corn is cooked, guests can add or subtract toppings to their preference.

Grilled Vegetable and Toasted Quinoa Salad

This was a salad I originally came up with this past summer for one of our Friday Night Steak Club events out on the grilling deck. Quinoa has been hailed as a "super grain" due to the facts it has almost twice as much fiber as most other grains and contains all 9 essential amino acids. The quinoa is toasted and then cooked in some beef broth which ends up with an incredibly savory umami flavor. Vegetables are simply grilled and rough chopped to go into the salad. Feel free to use whatever vegetables that happen to be available and good quality in your area.

Grilled Sweet Potato and Apple “Gratin”

Here is an interesting interpretation of sweet potato casserole and grilled apples. The sweet potatoes are not mashed but grilled as cute little discs. The grilled apple and sweet potato are layered with a maple rich cream that has nutmeg and cinnamon flavors. In lieu of cheese that is normally melted on top of a gratin this version has a sweet pecan crumble that helps keep this side dish somewhat traditional. This recipe features the use of a pellet grill but you can grill the sweet potatoes and apples on anything and then just finish the gratin in an oven.
