Grilled Vegetable and Toasted Quinoa Salad

This was a salad I originally came up with this past summer for one of our Friday Night Steak Club events out on the grilling deck. Quinoa has been hailed as a "super grain" due to the facts it has almost twice as much fiber as most other grains and contains all 9 essential amino acids. The quinoa is toasted and then cooked in some beef broth which ends up with an incredibly savory umami flavor. Vegetables are simply grilled and rough chopped to go into the salad. Feel free to use whatever vegetables that happen to be available and good quality in your area.

Grilled Sweet Potato and Apple “Gratin”

Here is an interesting interpretation of sweet potato casserole and grilled apples. The sweet potatoes are not mashed but grilled as cute little discs. The grilled apple and sweet potato are layered with a maple rich cream that has nutmeg and cinnamon flavors. In lieu of cheese that is normally melted on top of a gratin this version has a sweet pecan crumble that helps keep this side dish somewhat traditional. This recipe features the use of a pellet grill but you can grill the sweet potatoes and apples on anything and then just finish the gratin in an oven.

This recipe is a loose adaptation from my days in the restaurant industry. Vegetarian options have become a necessary evil but this veggie burger is so tasty even the most hard core carnivore will enjoy it! Feel free to add extra chipolte if you do not mind the heat.

Grilled Hasselback Potatoes with Fresh Basil Pesto Aioli

An old recipe we recently revisited and spruced up for an edition of Friday Night Steak Club. With roots in Sweden this is a very loose translation of the original. Potatoes are sliced thinly about ¾ the way through so the potato is left intact but has of these wonderful crevasses for flavor to penetrate. Seasoned simply with extra virgin olive oil, sea salt and freshly ground black pepper they are grilled slowly until the skin is ultra-crispy. Finished with a vibrant basil pesto aioli, these babies were a perfect companion for all the tasty ribeyes we grilled up!

Grilling Brussels sprouts is a wonderful way to bring out their natural flavors. The addition of balsamic vinegar adds a nice little zing of flavor.
