Grilled Shrimp Cocktail with Mexicali Sauce

A riff on the classic Mexican Coctele de Camarones our version of shrimp cocktail is packed full of flavor and super easy to make. The hardest part is not over cooking the shrimp. After a quick brine to plump these shrimp and amp up their flavor they get grilled hot and fast to add a nice char. Make the Mexicali Sauce as hot or mild as you would like. Don't be afraid to add some chunks of avocado to make this dish even more authentic.

A great little appetizer or light meal, these salmon sliders are packed full of unique flavors from the east. Asian inspired ingredients work really well with full flavored fish such as salmon so this recipe was born rather easily. You can make the slider mixture ahead of time if you like and even form the patties and refrigerate until you are ready to break out your Grate Griddle. The kimchi slaw only gets better with time so be sure to make it first if you are going to be cooking the sliders sooner than later. If you cant find the kimchi or garlic chili sauce don't sweat it- just add something spicy. Sriracha would work well and is available basically everywhere these days.

The secret weapon of this mahi-mahi dish is the escabeche. In many Latin American and Mexican kitchens, escabeche refers to marinating fish or another protein in an acidic mixture. But vegetables prepared with this method become a light side dish with a nice acidic bite that pairs well in the summer with a lighter protein like mahi-mahi.
