Often times when grilling rack of lamb or bone-in pork roasts it can be difficult to get a good "all over" sear. How to GRILL Wagyu and Kobe Beef

Grilling Wagyu or Kobe beef is generally not recommended. On a traditional grill surface beef with such a high fat content would become engulfed in flames. Wagyu is just a word that means "Japanese Beef". There are four breeds of Wagyu cattle that are native to Japan. Of these breeds, there is one that is truly remarkable: the Kuroge Washu. All Wagyu are going to have a higher fat content than, say Angus, but the Kuroge Washu is where true Kobe beef comes from. Live Wagyu cows are banned from exportation out of Japan but there was a period of time when some were allowed to be exported. Japanese Wagyu and Kobe meat has always been allowed to be exported. There are still some full blooded Wagyu being bred in the states but most have been interbred with other species.

Balsamic Glazed Grilled Veal Chops

In our quest to continually come up with interesting recipes veal has zero love on our website. So we changed that! Veal has a subtle flavor that falls somewhere between pork and beef and has very little intramuscular fat. You have to be careful not to overcook a veal chop or it will dry out rather rapidly. This is a relatively simple recipe where most of the work is done ahead of time. Be sure to marinate in the balsamic mixture for at least 4 hours to ensure maximum flavor. The leftover marinade is reduced down resulting a really big bold flavor. This is a good recipe to really practice your reverse sear skills. It really makes for an amazing veal chop!

Lamb Kebabs with Red Onion and Yogurt Sauce

Another one of our customer submitted recipes. Quite simple and easy to make the combination of lamb and mint gives these kebabs a nice Mediterranean flair. This is a perfect summer recipe that would pair well with a glass of red wine. If you are feeling up for the challenge be sure to make the grilled naan bread to go along with your lamb!
